I'm nowhere in this thread so obviously, Church, you're not hungover, you're still drunk.

Good grief, rosemary and blue cheese on beef . . . cows across the globe are mourning.

4churchill 10-16-2005 03:26 PM

ahahahahahahahaha

i always get you and VT mixed up...and yes "I may be drunk"

TootsSUT 10-16-2005 03:52 PM

I tried the blue cheese on Filet a couple of nights ago just because of this thread and...............YUK!!

I moved it over to the mashed potatoes instead! It was ruining a perfectly good steak!

VTSTOMPER 10-16-2005 05:06 PM

If you don't like bleu cheese - you ain't gonna like it on steak!

Tonight I am going to do the kick ass rosemary (adding some garlic, wine, to it, and it will soak for some time) idea! I will let you know!

Now you're making sense!!! YUMMY!!

rodster 10-16-2005 06:20 PM

Rosemary and wine on steak !?! Argh! That's it -- I'm calling the National Cattlemens Association!!

Cold smoking with Jack Daniels wood chips is the ticket.

Remove the bottom bowl of your R2D2-looking smoker and fill it half full of JD chips. Heat the bowl over a stove flame until the chips just begin to smoke. Quickly put the bowl in the bottom of the smoker. Put two cans of Sterno under that bowl so the tip of the flames touches the bowl. Put the best filets you can find on the top rack (and don't butterfly them).

Walk away for three hours and don't lift the lid. Open the side door to check on your chips and sterno if you must but only for a short period. (You're cooking with very how heat and don't want any to escape.)

After three hours (or four, if you like), pull the filets, put them on a cookie sheet, salt and pepper to taste (nothing else) and slide under a hot broiler for 20 minutes.

Remove and enjoy.

Out west our cattle gratefully die like samurai to serve their masters. If you must sully their honor with parsley, sage, rosemary or wine, GOOD GAWD man, do it in a sauce on the side.

And that is all.

Until someone starts a thread on serving octopus. I'll be all over that.

Speaking of PA (and steaks), my wife is from Beaver County and she makes Pittsburgh steak salads. Ever had one?

A very righteous and honorable use of leftovers!

jkH1+H2=H3 10-16-2005 08:29 PM

Yea, the steak was cooked Pittsburg style where its sear Just about black on the outside, med-rare inside. Man it was really good. Perfect for a day like today in PA, fall is in the air.....

jkH1+H2=H3 10-16-2005 08:30 PM

Tell the wife sorry about the Penn State Game, ouch.

Frank2005 10-16-2005 10:06 PM

Went to Paces (don't know, but maybe a local chain) last night and had a nice rib eye. Cooked to perfection!

jkH1+H2=H3 10-16-2005 11:19 PM

Why ???are we talking about Meat,?? If I go to general topic for the guys, Thats prime rib eye!!!

VTSTOMPER 10-16-2005 11:48 PM

MMMMM!

It was good! I need to do that again sometime. I am going to grab some taquila this week - and I am going to do the margarita steak. I will let it soak the day away. By the way - this stuff is grilled! All the steak I cook is on a Grill - outdoors, not this lame stuff inside on a frying pan.

jkH1+H2=H3 10-17-2005 12:36 AM

Grilled, Grilled, Grilled. I am still talking about meat, This is a blog about prime meat. I know of 69 ways to marinate meat.
When you grill, professionally speaking!! Sear it on both sides, Ok, It should be hot,! pink,! and juicy !insidehier. Other than that you over cooked it.

jkH1+H2=H3 10-17-2005 12:38 AM

The cut depends on what you're "allowed" to put on it.

Fillet - salt & pepper
Porterhouse - salt, pepper, garlic
Strip - salt, pepper, Steak Seasoning (Montreal Steak is great)
London Broil - marinate that baby overnight
Cube Steak - ketchup

Good call using the bullet smoker. I like doing whole chickens or BB ribs in mine. Nothing compares!

Ketchup on cube steak -- been enjoying that since I was a kid.

Ever try Spade L Ranch seasoning? Yumbo. I like it better than Montreal. Free sample!

KenP 10-17-2005 03:58 PM

You should also try a BlacknBleu burger.

Blacken the meat and put crumbled bleu cheese on it just before serving.
