Generally speaking, do Hummer dealers have these options at the store at time of purchase? Like could I go into the dealer and have them install the rear camera and the tire rack for the rear hatch or would they have to specially order it?

I think it depends on the dealer, you are more likely to get instant gratification from the dealer on bolt on items, not necessarily from audio/ video type stuff.
This has just been my experience. And it depends on how creative the parts manager gets when he is ordering.

One main problem is installation, dealer will always do a good professional job that looks like factory job. I have some neat backup sensor I bought online 6 months ago, it is still sitting on the shelf. I saved hundreds $ by buying it online, but I am just too lazy to get someone to install it, actually I made 2 appointments but had to cancel, just not important enough. So maybe I didn't save the money, because a cheap part sitting on the shelf is money wasted.

So I won't back into another car for the 3rd time. But first 2 times happened during the first month of Hummer ownership, maybe I don't need it anymore now it has been 10 months.

How could you? The H2 is the same length, if not shorter, than some of the MBs and BMWs you've driven.
Did you ding the H2?

H2 is actually easier to drive than many others.
1- I backed out of garage and made a swing around on my driveway, back straight into my sister's ML, I forgot she was visiting and staying with us for 2 days. $1500 cost.
2- I back straight out of garage, in 2 seconds ran into a Infinite I30 parked right outside that garage door. $5000 cost.
3- Hummer center steel bumper and left corner were replaced at $700, pretty cheap.
Simple stupid cause, I didn't take one look first.

The camera is so easy to install yourself.
I installed mine and it is as simple as running a wire, inside the vehicle, from the back to the front and then pluging the ends together.
I would be willing to give you tips if you want them.
