Normal operating temp can range from 180 on the low side to 230 on the high side.

Standard operating temp is 190-195F. The GM factory application manual for the 6.5l diesel states the following:

Extended idle, >100 degrees F external ambient temp - 262F engine temp

City traffic operation - 118F external ambient - 255F

Grades - truck at GCVW, 7.2% grade, 100F ambient - 250F

Thermostat full open temp - 214F
Thermostat start to open temp - 190F

So - there's little risk of overheating your truck.
