Default Was on, now off

So, the CE light comes on and the code shows low fuel. Check the fuel pressure and sure enough it's a little low. Replaced the fuel pump a year ago so the mechanic will cover it on Monday but now the light is off. WTF is that about?

Whats the fuel pressure at? If a little low means down about 57-61 psi before changing the pump you should check the regulator. With a fuel pressure gauge installed and engine running remove the vacuum source from the regulator(on the left fuel rail) and see what the fuel pressure does. If it jumps up to 67-69 psi the pump is making pressure but the regulator is lowering the pressure a little too much.

It's at about 50.

50 psi is low, should be at least 57 psi. I would pull the vacuum line from the regulator and see what the pressure does.
