Re: sleep study
can you just walk in to have this done or does your Doctor have to send you?
seeing that needles are not a part of it, I want to look into it more.

Not sure about your insurance coverage or anything like that, but I just went to a Pulminary Specialist doc who then referred me to the study center which took a month to get into. Then took the study, waited a few weeks to see the doctor again, then was referred back to the study center about a month later for the second test. Then a few weeks after that I met with the specialist again.
There are relatively few beds for this testing, but more are being added. The specialist team I went to is actually building their own center in their building. That's drastically reduce the wait time.

If you have a problem, it's worth it.

Same hare. Try to schedule appointments ahead of time even if you haven't had the next one. It could drag on a long time.
Diet can only help so much. I was never "fat", but was quite heavy. I'm a big guy anyway. I lost 40 lbs and things did improve, but nothing was cured.

Re: sleep study
One thing you do want to watch out for is if they walk into the study room with an Anal Thermometer,
make sure its the right size for your height and weight...
