Apalachicola Bay is considered one of the cleanest estuaries and most productive marine ecosystems in North America. The Apalachicola Bay oyster is a big part of the local economy and the bay produces 90% of Florida?s oysters and 10% of the nation?s supply.

All this talk about oysters made me crave some right now. Too busy on a project at the moment, so I had to go with the smoked ones. Though not fresh on the half shell, they filled the bill for right now.  I'll be headed to King's Fish House later today to fill that need to feed .. they have a half page dedicated to their varieties of fresh oysters on the half shell. Mmm-mmm good!

You have to try the NW Pacific. They are not dinky like those little "sand-n-mud" cousins from the east...you know, that taste like sand -n-mud from the east!
I've eaten at King's, Long Beach...good food!

I've had the NW Pacific oysters! I've been to Seattle a number of times. I've also had the Apalachicola oysters, too, from my Florida days. Definite different flavors. Hey, I'm going to the Long Beach King's Fish House tonight! Small world! Though, I prefer the Huntington Beach or even the Carlsbad locations more. I'll 'slurp' a couple of oysters for you!

Well, it's not always the same. If they are REALLY big ones, I do a quick bite, then swallow. If they are small to medium, I chew about 4 chews, then swallow. Sometimes those big ones are mindboggling to me. I start thinking about that big, slippery glob and I just automatically swallow. The lemon and hot sauce is perfect on them. I had only a dozen tonight, but they were chilled JUST right .. very fresh. Used a Meyer lemon and a dot of extra hot sauce with extra horseradish. Heaven.
