Just took the boat and dog out to Island Beach Park. Tices Shoal anchorage and a short hike over the dune for a swim in the Atlantic...
Early back cause of thunder showers. But the dog loved it!

I'm at work now, woke up at 10:15 am from my b-day celebration to a call that I had to come to work, a couple cell towers quit working so I have to go fix  sucks to have to work but I can use the O.T.

Had to get up early, around 5 AM to go to my moms, cause DF here forgot his wallet there yesterday.....
Had breakfast at the Shul this morning as we had an OPEN HOUSE/MEET the RABBI kinda event...Its what we HEBREWS call the RABBI or SHUL Shopping time of year where people are looking to join a Synagogue (the end of summer before the Jewish High Holy Days) anyway lots of good food...YES there was BAGEL & NOVA ++++++++++++++++++++++++++++++++++++++++
Believe it or not they have ME working to get the Library Computers up and running...so far I haven't screwed up to bad...I'm learning a lot by doing it...

Smoked some spare ribs today for around 7 hrs on my new Weber Smokey Mountain.
Played with the boy, watched the Brickyard 400, and cut the grass. Lot's of yard work to do over the next two days.

Picked up a chimney starter for the charcoal grill. That thing rocks! Had the rib steaks cooking in 15 minutes and they ended up being phenomenal! I started them by browning them in a pan of EVOO. Then throwing them on the hot grill. I put six sprigs of thyme, a pint of ripe cherry tomatoes, a cup of fresh basil leaves, and a whole head of roasted garlic in the pan of steak juice over medium heat for 4 minutes. Holy $HIT talk about money! I poured that mixture over the steaks and people went wild. Close to finishing the 6th bottle of cab now that everyone left. Fuk that take home midterm...it'll finish itself tomorrow! It's almost time to open a bottle of Glenfiddich and fire one up....

Browned in a pan of EVOO?!?! WTF?!?!?! I wouldn't admit that to anyone! I swear, holy.... are you kidding me....
If you need more heat or a larger heating zone, get another chimney starter and dump two of those suckers in there. My 500* thermo wrapped around itself when I piled most of two chimneys on one side. Charred those suckers up so fast!!! Then to the warm zone until done.  Works best with super thick steaks.
Ever done a reverse sear? Indirect heat until they are within 20* of ideal, then put over high heat for the sear. It's supposed to be more accurate. I haven't done it, but I've heard good stuff about it.
