Who here is good at Wok cooking?
I just got a new Wok for Christmas and need some input of things I need and need to do so as not to ruin it or destroy my first attempt at cooking in it.

Re: Who here is good at Wok cooking?
well I figured out a little. do not use frozen green beans...thaw them first. and oh my does it cook chicken fast. I did the slice and dice on 2 lbs of chicken breast and it cooked in about 5-7 miinutes, way better then my Echo pan... I'll save it for burgers.

Re: Who here is good at Wok cooking?
well after reading a bit about them on the web I found I have a steel teflon coated one. my biggest concern is how to tell when its at the proper heat. the info I see the most about cooking with one is to watch for smoke when it reachs its optimum heat. I have an electric stove so its easy to set the heat, but I have to learn where it needs to be to get the right cooking heat without seeing smoke.

Re: Who here is good at Wok cooking?
if the food does not cook, not enough heat....if the pan melts or warps, too much heat...hope this helps......

I have to agree, gas is the way to go when using a wok.

Re: Who here is good at Wok cooking?
well I did ok for the little I used it yesterday. even on an electric stove its a huge difference in fry cooking. the fact it has a flat bottom makes the diff as compaired with a standard wok. if it didn't touch the burner then yes it would be very hard to work with.

Re: Who here is good at Wok cooking?
my favorite thing to eat cooked in a wok... i get it at a resteraunt they cook it right in front of my face, about 24 oz of chicken, 14 ounces of Shanghai Noodles, and about 4 ladle fulls of szechuan sauce, and anywhere between 16-22 chilipeppers...its they most amazing dish in the world i have no idea how to actually cook it though

We have a few of those bennihana or tepanyaki restraunts here. It's a fun experience for the kids and it's actually neat and comforting to see your food prepared right in front of you.

as compaired to the local China Buffet in Chelsea. I have gotten bad food twice. I think they buy crappy spring & egg rolls. the worst was the egg roll. I bit into it and when I lowered my hand it was gooy and stringy...rotten eggs. I was mad as hell but already had a bit in my mouth. I just spit it in my napkin and left.

no not like that we have a few of those heres to but what im talking about is its a normal restaurant but they have like a what they call "market area" where you go up with your little pan go down the line pic what veggies and stuff and what sauce you want in it, you tell them if you want chicken or steak etc... and rice or noddles etc. and then they take your little pan thing and cook it infront of you in a wok and then you go sit down at your table. THey also have a normal Al La Carte menu to, but most people do the "stir fry" thing the restaurant is callefd Stir Crazy

It's called Mongolian BBQ in Anchorage. You fill it up with what or as much as you want...and hand it back to them to cook. It's fricken good! Especially the extra hot and spicy!
